Frank’s Redhot Chicken Salad

This is an easy lunch to prepare for the week and a break from your boring salads. You can top this on a salad, eat it alone, or add it to a sandwich.

Time: 40 minutes (Baking time of chicken)

Skill Level: Super easy

Amount: 2 cups

You need:

  • 2 chicken breast – boneless, skinless, cooked and cubed
  • 3 Tbl fat-free mayonaise
  • 4 celery stalks – chopped
  • 1 carrot – peeled and chopped
  • 2-3 tsp parmesan grated cheese
  • Frank’s RedHot sauce to taste
  • 1/2 tsp dry ranch dip/dressing mix

Do this:

  1. Season chicken breasts with salt and pepper. Bake at 350 degrees F for 40 minutes or until the internal temperature is 165F. Cool and cube.
  2. Mix everything in a bowl or storage container. Add more mayo and hot sauce as needed until your desired consistency and taste are achieved.
  3. Enjoy!
